Unicorns are all the rage now, from unicorn Frappuccinos to unicorn macarons. This mythical creature has definitely captured our attention with its dreamy hues (check out our Unicorn Collection). With the crazy food trends going on, there is one that clearly stands out: Unicorn noodles! These noodles are a work of art, created by the creative mastermind A.J. from The Indigo Kitchen food blog. Unicorn noodles are basically clear or white noodles that have been naturally dyed with purple cabbage. They're easy to make and fun to eat!

To dye the noodles blue, boil purple cabbage in a pot for 5 minutes to release its colour. Then soak the noodles in the pot for 5-10 minutes. The amount of water-to-cabbage and time used to soak the noodles will affect the shade of blue. For a darker hue, soak the noodles longer and add less water to the cabbages.
Next comes the fun part: changing the noodles from blue to pink! All you have to do is squeeze a lemon or lime over the noodles and you'll be able to watch them turn pink before your eyes! You can also turn them purple, by dyeing the noodles a darker shade of blue first, before squeezing the lemon.

The unicorn magic behind it all is actually simple chemistry! The purple cabbage releases a pigment called Anthocyanin, which reacts to acid by changing colour.
