MRWhat do you do when you aren't skating?

SSIt's a tough question as I am almost always skating (haha). However you will find me in the kitchen, hula hooping, swimming at the beach or trying to run, I am not a runner but I am working on it at the moment!  

MR: How many pairs of roller skates do you have? Which is your favourite pair and why?
SS:  I get asked this all the time and people are always disappointed when I say I only have 3 pairs (haha). They're all specific to a certain style of Roller Skating so I love them all ! However my go to pair that I can use for almost everything is my Moxi Roller Skate Boots, Roll-line Plates and Bones Bearings plus a mix of these 3 brands for wheels. There are so many reasons why I love this set up and I am a skate gear nerd so I won't go into all the nerdy details but lets just say  Moxi Skates are soooooo dam awesome, so pretty and so comfy and I love what the brand stands for! Oh and a side note to this, RollerFit now has 250 pairs of skates of 7 venue :) so some would say I own 253 pairs.  

MRApparently you're also a foodie! Can you share with us your favourite healthy recipe?

SS: Where do I start!  I love food.  I am even eating while I write this!  This delicious recipe is so easy and you'll be wondering why you didn't make it earlier. Takes no longer then 20mins. Perfect for week night dinners.  

Miss RunnerWhat motivated you to start this awesome team and bring the idea to life?

Stacey Short: RollerFit was created from my love for Roller Sports.  I had a vision of growing skating again, however I wanted to be able to offer it as an alternative way for people to stay active and exercise their body and mind in a non-competitive environment. Roller sports is not only great for your overall health but it's also so much fun and I wanted to be able to share this with my community thus RollerFit was then born :) 

MR: Out of so many sports, why roller skating?
SS:Roller skating is a combination of strength, creativity, technique and grace which is just a few reasons why love this sports. Although I had fun playing some team sports with my friends growing up, I found Roller Skating allowed me to be myself, it has always been a  creative outlet whilst also giving me and over all work out. With so many disciplines within this sport, it has forever exercised, not only my body but also my mind!  I have been skating since I was 5 years old and I am still learning and because it is so creative and can be so technical I know I'll never stop learning. About 2 years ago,  I started to learn to dance on Roller Skates and I am loving how challenging it is.  It makes me feel alive!  


Mexy Bowl:

1 Can of Red Kidney Beans 

1 Can of Crushed Tomatoes 

1 Cup of Cooked Quinoa 

1/2 Medium Red or Green Capsicum (Sliced) 

1/4 of  a Medium Cucumber (diced) 

1/2 a Red Onion (Sliced)  

1/2 Avocado (sliced) 

1 clove of Garlic (chopped) 

1/2 Tsp Ground Cumin 

1/2 Tsp Ground Paprika  

Small Bunch of Coriander

2 tbsp lime juice 

Salt and Pepper  to Taste 

Heat a large non stick pan over medium high heat. Add a splash of olive oil and throw in the onion and garlic cook and stir for 3-4mins, throw in the crushed tomatoes, cumin and paprika. Cook for 5mins, stirring. Add the red kidney beans and stir for another 1-2mins.  

Meanwhile layer the quinoa, capsicum, cucumber, avocado in a bowl. When your beans are ready, add in the beans. Top with lime juice, salt and pepper and Coriander.  

Toss and Serve!
